Why did Oakvale craft the Bellini?

As compelling as it is, sparkling wine doesn’t always offer the flavour and texture profiles so yearned for by drinkers. When we researched the possibility of introducing an interesting wine alternative, we kept coming back to the Bellini, one of the most traditionally respected cocktails of the 20th century, and indeed still an outstandingly popular drink today. Invented mid-century by the founder of Harry’s Bar in Venice, Giuseppe Cipriani, this mixture of Prosecco and peach puree took the drinking world by storm and can now be enjoyed in myriad guises at bars all over the world. With the release of Oakvale’s Bellini, our intention is to bring this sophisticated mix into the home of Australian wine drinkers. Oakvale’s Bellini is the supreme cocktail in a bottle. This sparkling mélange is made from fruit grown in our prized Hunter Valley vineyards and fermented in Oakvale’s state-of-the-art winery. As a stroke of genius, it is then united with freshly pureed white peaches, sourced locally from a small orchard in Nashdale, NSW. What emerges is an elegant, semi-sweet sparkling thrill that makes for a compelling alternative to the standard bubbles in a bottle. Despite Bellini’s playful sensibility, this wine reflects Oakvale’s commitment to respecting the vines and the earth from which they grow. Our minimal intervention winemaking allows Mother Nature’s influences to shine through, resulting in a true expression of place and time.
