| PROCESSING | After extensive ageing on the vines the grapes were hand-picked, crushed, destemmed and transferred into open fermenters. Fermentation was stopped after a short time by the addition of spirit, enabling the wine to retain most of its natural sugars. The wine then underwent extended maturation in 70 year old oak casks in the Oakvale winery. |
