Oakvale Very Fine Oloroso Sherry

Vintage NV

Oloroso (meaning scented in Spanish) was produced in the traditional manner, whereby the base wine fermented to near dryness before being ‘strengthened’ with the addition of spirit to preserve and create the style. Maturation took place in our 70 year old casks for over 15 years! The palate is semi-sweet, nutty, very smooth and finishes long.

Olrosso Sherry is a wine ideal with food especially with antipasto, tapas & leek soup.

Winemaking

Produced mainly from the Spanish grape variety Palomino and blended later with Pedro Jimenez, the base wine fermented to near dryness (retaining some sweetness) before being fortified with spirit to about 17% alcohol. The wine since then has aged in very old oak puncheons and more recently 5,000 litre oak vats, for over 15 years, being bottled only on demand. The colour is a light brown colour and possesses an exceptionally long, smooth palate.
