Oakvale Gold Rock Chambourcin

Vintage 2008

Crimson in colour with a purple hue, this beautifully crafted Chambourcin exhibits aromas of vibrant berry fruit with subtle toasty oak. The palate is medium bodied with intense fruit, fine tannins and is suitable for early drinking or will cellar for several years.

Chambourcin is a wine ideal with food especially with duck, game or spicy foods.

Winemaking

The grapes were machine harvested early morning in late February 2008, at 13.2 baume. At the winery, the grapes were crushed, de-stemmed and transferred into stainless steel open fermenters, where they underwent controlled fermentation with a selected yeast culture. Plunging of the fermenting grapes took place 3 times daily. The grapes were pressed when dry, with the wine then undergoing malolactic fermentation in tank, before transferral to old oak barrels for 8 months maturation. Bottling of the wine occurred in January 2009.
