Vintage 2008

Displays red cherry fruit with hints of dark chocolate and new leather. Ten months in old French and European oak has contributed to it's length and has added weight and roundness to the palate.

Sangiovese is a wine ideal with food especially with osso bucco, wood fire pizza, & olives.

Winemaking

The grapes were machine harvested early morning in late February 2008, at 12.3 baume. At the winery, the grapes were crushed, de-stemmed and transferred into stainless steel open fermenters, where they underwent controlled fermentation with a selected yeast culture. Plunging of the fermenting grapes took place 3 times daily. The grapes were then pressed with the wine settling in a tank for 4 days, before transferral into old barriques for 10 months maturation. In January, the wine was removed from barrels, filtered and ultimately bottled.
