A very bubbly white blend utilising the best of Chardonnay and Verdelho grapes. Chardonnay gives body and richness coupled with the fruit driven nature of Verdelho. Highly fruity, offset by very subtle oak, the wine is very “drinkable” with full flavour, great mouth-feel and balance between acid and sweetness. Suitable for any occasion and an extremely versatile match for food.

Both varieties of grapes were machine harvested in late January 2008. At the winery, all grapes were chilled, lightly pressed and the juice naturally clarified. Cold fermentation for the majority of the blend components took place in temperature controlled stainless steel tanks with an added yeast culture, with a small percentage of Chardonnay fermenting warmer with oak. Following fermentation, the Verdelho matured on its yeast sediment for only a short period of time to retain maximum fruit freshness, while the Chardonnay experienced extended contact to build some richness. Blending, fining and stabilising took place in January 2009 before being processed via the Charmat method into a Sparkling wine.
