Vintage NV

The luscious palate of dried apricot, over-ripe peach and citrus flavours meld with the rich natural sweetness from the noble rot, Botryis Cinerea. However sweet, the wine finishes long and with a slight touch of refreshing acidity.

Botrytis Semillon is a wine ideal with food especially with pate, blue cheese & crème bruille.

Winemaking

The grapes were hand-picked from selected rows in a vineyard in Southern NSW where the noble rot, Botrytis Cinerea had taken hold of the grapes and imposed its wonderfully concentrated and complex flavours; so renowned of the style. After pressing the clarified juice then fermented cool in a stainless steel tank before being transferred to old barrels for 10 months maturation. Blending, fining, stabilising and final filtration then took place before bottling.

10.5% ALC/VOL
