The grapes were selectively hand picked early in the morning. At the winery, the grapes were destemmed, chilled, lightly pressed and the juice naturally clarified. Cold fermentation took place in temperature controlled stainless steel tanks for approx 2 to 3 weeks, following the addition of a selected yeast strain. After fermentation, the wine spent a very short time on its yeast sediment, before undergoing fining, blending, stabilizing and filtration. This wine was bottled within 3 months to retain its freshness!
