Produced in the traditional 'methode champenoise' style, this ever popular non-vintage sparkling wine displays lifted bready/yeasty characters on the nose followed by a palate that is clean, crisp and elegant with great length. Enjoy well chilled for maximum appreciation!

Winemaking

Produced according to the traditional “champagne” method; the grapes were hand-picked from selected rows on our Chardonnay blocks at about 10 baume. At the winery, the grapes were whole bunch pressed with the best free-run juice being separated and naturally clarified, before fermenting cold in a stainless steel tank. Maturation for up to 6 months on yeast lees followed, before undergoing tirage (or secondary bottle fermentation). After a further 18 months ageing on the yeast lees in bottle, the wine underwent disgorging, where the yeast sediment was removed and a sweet liqueur added to top the bottle!

12.7% ALC/VOL
