A tribute to Australia's persistence and drive to produce wines of individual character, Oakvale Sparkling Shiraz is our tribute to a unique sparkling treasure. A rich wine expressing blackberry and spice with a smooth velvet finish.
It is the perfect aperitif or accompaniment to game and poultry dishes or to celebrate a special occasion. Sourced from premium cool climate fruit the wine has undergone extended lees maturation developing a complex and elegant sparkling wine.
Sparkling Shiraz is a wine ideal with food especially with Pizza, tapas peking duck.
The Shiraz base wine was made from grapes in the Adelaide Hills region of South Australia, in the traditional sparkling/champagne method. The juice fermented on skins until about 2 baume, before being pressed and then transferred into old barrels for about 8 months maturation. Secondary fermentation of the base wine then took place in bottles (tirage), with the wine then maturing on its yeast lees in bottles for between 5 and 10 months. After this time, the bottles were disgorged and the wine topped up and labelled.
